This salad is packed with heart healthy nutrients such as fiber, folate, manganese, potassium, iron And Vitamin C. These nutrients allow oxygen uptake, which results in increased activity as people age.

Ingredients

  • Four roasted beets, approximately 1.5" in diameter, peeled and sliced
  • Five cups of arugula lettuce, lightly coated with balsamic
  • 1/2 cup roasted pecans
  • 1/2 cup crumbled goat cheese

Instructions

  1. Preheat oven to 425 degrees
  2. Roast beets inside heavy duty foil wrap, lightly salted and coated in olive oil
  3. Roast pecans at 350 degrees for approximately 8-10 minutes. Chop after cooling.
  4. Crumble goat cheese slices or use pre-crumbled goat cheese, readily available in most grocery stores
  5. Lightly coat arugula with balsamic dressing, then add sliced beets, roasted pecans and crumbled goat cheese
